Excellent question! Lol.
Think as to why Jamie came back from France when he was at university…. He was in love with a french girl…. and she choose his opponent in the end.
That happened in Dragonfly in Amber, though, which is why everyone who has read the books is a little confused about why it’s in season 1.
This is my theory (SPOILER ALERT, though, if you haven’t read the second book, Dragonfly in Amber):
In the second book, Jamie talks about having fought only one duel (when he was in France) with Charles Gauloise over a girl named Annalise de Marillac. He won the duel, but lost the girl. 😉
Mind, it’s just a theory. But I hope I’m right.
I think it is mentioned in Outlander when they are at Lallybroch
